Comments

This unique dessert wine comes from a very ancient Malaga vines brought to Italy many centuries ago from Spain. The Great Grand father of Giampiero (Owner/Wine Maker) found this grape and save it from extinction. Now the family jealously keeps it as the only example of Malaga in Piedmont.

Malaga grape is very delicate so it requires a careful hand pick to preserve the quality and the aromas hidden inside.The grape is then de-stemmed and soft pressed with pneumatic press and the juice together with the skins goes into stainless steel watts for fermentation.
At this point Giampiero lowers the temperature down between 3 and 4 degree Celsius and start the fermentation/maceration on the skins. At this temperature the juice is almost frozen (like a big ice cream) and the fermentation is almost impossible, that is why the wine develops only 0,0001% degree of alcohol per day and it is very long. After about a month, when the wine reaches about 3% degree of alcohol, Giampiero increase the temperature up to 8° Celsius, separates the skins from the juice and slowly brings the fermentation up to 7% alcohol. With this process the wine develops a natural residual effervescence that slowly disappear with the ageing and after opening the bottle. So it is not sparkling but has a natural residual CO2 inside.
